They eat loads of saturated fat, yet have very low chronic disease. They don’t have much CVD, but they do have measured plaque buildup. Fermented milk contains SCFA which is acetate dominant. It is hard to determine an exact “fiber equivalent” since it’s all exogenous. 1g of fermentable fiber yields 0.6g of SCFA. 3L of fermented milk would yield about 3.2-4.0g of “type 3” fiber, but yields mostly acetate. The remainder of their SCFAs likely come from mucin which would be about 10mmol of butyrate. So very little butyrate, very little acetate, little to know propionate. The Masai teach us you can live a long time in a proteolytic state. But, they walk 20k steps a day and have amazing genetics.
