Hi, the value of $stXRP is intended to mirror that of $FXRP. However, this peg is maintained by market forces through liquidity pools on DEXs. 
In times of extreme market volatility or if there is insufficient liquidity, the price of $stXRP could trade at a discount/premium to $FXRP.   
There are mechanisms in place to manage liquidity, so it's rather unlikely to occur. As you have the flexibility to choose when to stake, you can mitigate the risk entirely.
