Kazuya Takahashi laid out all the character motivations in Donkey Kong Bananza:

"Donkey Kong is just out for bananas, Pauline wants to return home to the surface, while the Void Company seeks to hog the wealth for themselves."

Motokura added Donkey Kong is motivated by his love of bananas, so it's necessary to have a character like Pauline who the player can relate with.
