The largest financial institutions would disagree with you. For example, Robinhood chose to build on Ethereum specifically because of MEV concerns on SOL. Robinhood has something like $250B worth of AUM they're going to tokenize on Ethereum. 

JPMorgan just announced they're building stablecoins on Ethereum. BlackRock is primarily building on Ethereum. Hell, even XRP is mostly launching their stablecoins on Ethereum RLUSD.
