The truth about why we have so many E Coli outbreaks in our lettuce in America

“Lettuce is especially prone to E. Coli outbreaks because it's grown next to the largest cattle feeding company in the world. Despite only receiving X inches of rainfall a year, Yuma County, Arizona grows around XX% of all winter greens in the United States. 

Within the heart of the Yuma county lettuce fields is a feedlot processing XXXXXXX cows a year. The feedlot is owned by Five Rivers Cattle Feeding, which is the largest cattle feeder in the world. A private equity firm purchased five rivers from the world's largest meatpacker, JBS. 

Since lettuce is composed of up to XX% water, farms rely heavily on irrigation. E. Coli from the cattle's concentrated fecal matter can contaminate the lettuce crops from irrigation and dust. 

Previous testing confirmed the presence of the exact strain of E. Coli in the lettuce and the feedlot canals. Contaminated lettuce easily leads to E. Coli outbreaks because it's eaten raw. While water alone won't remove E. Coli, I found one study that found a water solution with XX% baking soda was able to inactivate it. 

One thing that's clear is that we need to focus on improving and localizing our food supply chains.“
