A private equity firm purchased five rivers from the world's largest meatpacker, JBS. Since lettuce is composed of up to XX% water, farms rely heavily on irrigation. E. Coli from the cattle's concentrated fecal matter can contaminate the lettuce crops from irrigation and dust. Previous testing confirmed the presence of the exact strain of E. Coli in the lettuce and the feedlot canals. Contaminated lettuce easily leads to E. Coli outbreaks because it's eaten raw. While water alone won't remove E. Coli, I found one study that found a water solution with XX% baking soda was able to inactivate it.
