"Tuesday in Spain. High Speed Bullet Train to one of our favorite towns Donostia San Sebastian. A Northern Basque Town with a half moon beach and relaxing chill atmosphere. Being that Donostia borders Southern France Bordeaux you get great wine along with coastal food ambiance. We enjoyed some beautiful Spicy Lemon Chile Muscles along with an Octopus Braised Beef Cheek Paella. It was seriously delicious and the rice was just the right type of crunch. It's what they call the "Socarrat." It's the crispy caramelized rice layer at the bottom of a well-made paella. It forms when the paella cooks"

"After a long hike to the Top of the Mountain to see the Castle of Christ we worked up an appetite. Wednesday Lunch in Donostia: Simple fresh and somehow perfect like everything here. Started with anchovies on toasted bread a little txangurro (Basque crab) that was unreal then some jamn Ibrico and cured peppers that hit that sweet-smoky balance just right. Sea Urchin with Caviar was the perfect bite over fresh bread. Finished it off with a crisp Txakoli white wine and ocean views that make you forget what time it is.
