(this was a great recommendation to me by @nonregemesse ) For the Crusades I really enjoyed Harold Lamb's two parter Iron Men and Saints and The Flame of Islam. For the Third Crusade Ambroise's "History of the Holy War" is an epic eyewitness account. Pairs well with John Gillingham's biography of Richard I.
