"okay - let's discuss. how did you cook it was it on high heat or low heat if you cook on high heat there's "carryover cooking" I can tell by the pic it's easily 140Farenheit which is medium. check the temp my G. there's nothing wrong with medium or even medium well - it depends on the breed and the fattiness of the steak fattier steaks can be "overcooked". Think about a fatty beef brisket. It needs to be well-done or beyond well done cooked for XX hours"
