They make their own electricity for the thermostat controls using a thermocouple being heated by the pilot light. In the case of a central heating unit that uses electric blowers to force air through the vents you would be correct. Case in point I have a gas clothes drier that still needs electricity to turn the drum and run the blower and dash timer controls. I couldn't use it to dry clothes when the power was out.
