Took a sharpening class so have basics of sharpening and have been practicing at home. Want to ask is my bevel too big/wide Im trying to hold the angle best I can and I slip 3/4 tip of index finger behind the spine as a judge of approximate angle. "Edge after sharpening Hi all just wanted to pick your brains please. Ive noticed that after I sharpen my knives on chosera 1k 5k and then strop on leather (smooth side) with no compound my knife edges have A LOT of bite. My technique is raise burr on one side on 1k repeat for other side. I then progress straight to 5k and do the same process. I then deburr on 5k with edge trailing strokes. I havent had to use edge leading strokes as I find than I am deburring adequately (I think). Ill admit my technique isnt perfect. I can see slight irregularities on the koba from rolling my wrist slightly."

This is the first time sharpening shirogami [--] and I used a chosera 3k to apex and deburred on chosera 5k. I initially tried sharpening it on a 3k chosera which brought on a burr quite easily on my Tanaka W1 but it was actually not as quick on this knife and I had to drop down to 1k chosera because it felt quite stubborn. Mind you this is probably due to my amateur sharpening skills. After deburring on a 5k and stropping on bare leather it now has a nice toothy edge. Hitohira does not report a HRC for this W2. Very insightful and informative video on Japanese knife making. They do their own forging (warikomi) heat treat grinding and sharpening and handle installation. A father and son team.
