"I did weird light roast things on my Bambino Light roasted Ethiopian on a Bambino with massive (over)preheating a massive 1:3.7ish brew ratio (16:60g). [--]. I preheated the entire thing by running multiple shots through the pressurised filter into a pot where the real portalfilter was in which then got hot in parallel. [--]. I cut out a piece of V60 filter soaked it and put it on the bottom of the IMS 14-16g precision basket [--]. I poured in 16g of Sidama light roast and did WDT and self leveling tamper. [--]. "Ciabatta-ish Funny direct dough with 12-14 hour rise. 90% [--] wheat flour ("Anna by Molino Dalla Giovanna") /10% rye (German 1050)/0.5-1g yeast/15g salt/10g baking malt it ended up at 67% hydration and some extra virgin olive oil as a bassinage as I forgot to add earlier. I really love the final slice it's spongy and juicy/moist. Small rolls were baked without shaping the larger loaves were folded a third inward and then rolled over and the sides tucked under they rose another hour or so until the oven was hot again after baking the rolls :) Breadit Breadit"

"Got an Effe Ovens N3 Switched from the cheap Unold Luigi people were hyping up here in Germany to the Effe N3. This is night and day. These pizzas all baked in like 60-80s. Set to 450C. They are more done than the Unold produced in [--] minutes. The calzone doesn't have topping but it's filled with Nocciolata the milk-free one for a nice sweet treat. I had a lot of frustration with my Giant Defy 2023; where the pre-installed KMC X12 chain (which I had degreased and drip waxed) fell off repeatedly when cross chaining and backpedaling.
