Went to Hong Kong. My adventurous wife was all, “We can go to the famous food-vendor street!” The offerings were horrifying to me. Chicken-foot salad. Snake balls. Fish Swim Bladder. Foetal deer (I am not making this up.) It is clear that the Chinese had to heavily edit their cuisine to make it palatable to the western world.
