"Its so finicky At least it has been so far because I havent nailed down a good starter/flour/water ratio. I feel like I dont get much of a rise during the bulk fermentation. My first few loaves turned out okay but kinda flat. My last loaf I tried increasing the hydration and it was dense and gummy. It just feels like Im wasting a lot of flour trying to figure this out 😅"

"Mostly the time second is texture. My first three turned out okay but not as good of a rise as I wanted my last one was dense and gummy after I increased the hydration of my dough trying to get my dough to rise more during bulk fermentation. Made loaf #4 (5) today and adjusted the temperature and ratios and now its in the fridge and well see what happens tomorrow I suppose. 🫠"
