"A pause in my regularly scheduled holiday food to bring you braised cabbage. In a browned butter sauce. Ingredients: X head cabbage X cloves smashed garlic X sprigs thyme X tbsp butter Around two cups of chicken stock A splash of sherry vinegar Salt and pepper Directions: Quarter your cabbage then cut those quarters in half. If your cabbage is smaller just quartering will do. Salt your cabbage all over and try to get in-between the leaves let this sit for XX minutes to an hour. The salt is going to pull out some water and reabsorb some with the salt. When youre ready preheat a fry pan or saut" @sad_papi on TikTok 2023-11-16 01:39:47 UTC 2M followers, 2.1M engagements
"A lot of you guys are transitioning away from coated pans and I love that for you. If you were to own one type of pan I would recommend stainless steel. Theyre non reactive low maintenance dishwasher safe(mostly) and come at various price points. However they can be tricky to get used to. Especially if youre coming from a coated pan. The number one important thing is: temperature control. Not hot enough your food can stick. Not enough oil your food sticks. Too hot and the outside will burn and the inside will be raw and youll eat it off a cutting board and call it real food When I preheat I" @sad_papi on TikTok 2025-06-21 19:58:39 UTC 2M followers, 1.6M engagements
"Green oil three ways. Keep in mind you can use almost any herb or leafy green including basil parsley tarragon chives mint chervil kale lemon balm etc. If you have a lot of something in the garden make an oil and throw it In the freezer. Why not eh Most of my green oil recipes are measured by weight. A good starting point is around XX% the total weight in herbs. So for example if theres 200g of oil Ill throw in 20g of blanched parsley. But feel free to fiddle with it. I use a neutral oil so its more herb forward but if you want to use olive oil go right ahead. X. Blanch and blend Super" @sad_papi on TikTok 2024-05-30 00:27:57 UTC 2M followers, 264K engagements
